    Prepare breads for warming

    Preheat oven to 180°C (350°F). While oven heats, slice the sourdough boule into 1–1.5 cm (1/2 inch) thick slices. For mini rolls and croissants, leave whole. If ciabatta is large, halve horizontally.

    Brush and warm

    Place all breads on a baking sheet in a single layer. Lightly brush the tops of the rolls, ciabatta and sourdough slices with 1–2 tablespoons olive oil. Sprinkle the focaccia and sourdough lightly with the coarse sea salt. Warm in the oven for 6–8 minutes until crisp at the edges and warmed through; croissants may need only 4–6 minutes to avoid over-browning. Remove when just warmed and slightly crisped.

    Optional toasting

    For extra crunch, once warmed, briefly broil (grill) 30–60 seconds while watching carefully to toast edges — optional and recommended only if your oven has even broil heat.

House Maitre d' Butter

    Soften and combine butter

    Ensure butter is fully softened to room temperature. Place the softened butter in a medium mixing bowl or in the bowl of a stand mixer fitted with the paddle. Beat on low/medium speed for 30–45 seconds until creamy and slightly aerated.

    Add flavorings

    Add the finely minced shallot, chopped parsley, chives, thyme, lemon zest, white wine vinegar and honey to the butter. Add the extra-virgin olive oil in a slow stream while mixing to emulsify and loosen the texture. Mix until uniform, scraping the bowl once or twice (about 1–2 minutes total).

    Season

    Fold in the sea salt and freshly ground black pepper. Taste and adjust: add up to 1/4 tsp more salt or a touch more honey or vinegar if you want brighter balance.

    Chill and shape

    Spoon the compound butter onto a piece of plastic wrap or parchment and roll into a log about 1.5–2 inches (4–5 cm) diameter. Twist ends to seal. Chill in the refrigerator for at least 30 minutes to firm, or up to 3 days. Alternatively, transfer to an airtight container and chill. Right before serving, remove log 10 minutes to warm slightly for easier spreading.

    Garnish

    Optionally sprinkle a light dusting (about 1/4 tsp) of smoked paprika over the butter log and top with a few reserved chopped herbs for presentation.

Assembly & Service

    Choose a shallow basket or serving board lined with a clean linen. Arrange the warmed bread pieces attractively, grouping varieties for color and texture contrast. Place the chilled maitre d' butter log on a small butter plate or in a ramekin in the center or alongside the basket. Garnish the butter with a few chopped herbs and a pinch of smoked paprika if using.

    Provide small butter knives or spreaders so guests can cut a slice of the butter log or spread softened butter onto warm bread. If serving multiple covers, estimate ~2–3 slices/units of bread per person and ~2 tablespoons of butter per person (butter log quantity above yields roughly 8 servings at 2 tbsp each).

    Serve immediately so breads remain warm and crusty. Rewarm breads briefly if necessary before re-serving.
