    Prepare and warm breads

    Preheat oven to 350°F (175°C). Place sourdough boule on a cutting board and cut into 8–10 slices, each about 3/4-inch thick. Slice brioche and multigrain rolls in half horizontally. Cut focaccia into 8 slices (about 1/2-inch each). Arrange all bread pieces on a rimmed baking sheet in a single layer leaving small gaps.

    Lightly brush focaccia slices with 1 tablespoon extra-virgin olive oil and sprinkle the coarse sea salt evenly across the focaccia pieces.

    Warm the bread in the preheated oven for 6–8 minutes, until just warmed through and the crusts are slightly crisped. Remove from oven and transfer to a bread basket lined with a clean kitchen towel to keep warm.

House Maitre d' Butter

    Soften and whip butter

    Ensure 1 cup unsalted butter is softened to room temperature (soft but not melted). Place butter in a medium mixing bowl and beat with a hand mixer or whisk for 1–2 minutes until smooth and slightly lighter in color.

    Add aromatics

    Add the minced shallot (1 unit), chopped parsley (2 tbs), chopped chives (2 tbs), lemon zest (1 tbs), 1 teaspoon white wine or sherry vinegar, 1 teaspoon Dijon mustard, 1 teaspoon honey, 1 teaspoon sea salt, and 1 teaspoon freshly ground black pepper to the whipped butter.

    Using a spatula or mixer on low speed, fold and mix until all ingredients are thoroughly incorporated and the butter is smooth. Taste and adjust seasoning: add more salt, pepper, or a squeeze of lemon if desired.

    Spoon the finished maitre d' butter onto a small serving dish or form into a log using parchment paper if preferred. Chill briefly (10–15 minutes) if you want it firmer for slicing, or serve at room temperature for easy spreading.

Finish & Serving

    Arrange the warmed bread assortment attractively in a basket lined with a clean towel. Tuck in a sprig of fresh herb for aroma and presentation.

    Place the maitre d' butter in the center or alongside the basket on a small plate. Optionally drizzle 1 tablespoon olive oil lightly over some bread pieces for shine and extra flavor.

    Serve immediately so guests can tear or slice bread and spread the house maitre d' butter. Provide small butter knives or spreaders.
