Prepare the Melons
Using a melon baller or knife, scoop out the watermelon and cantaloupe into bite-sized pieces. Place them in a large mixing bowl. Rinse the strawberries, remove the green tops, and slice them in half. Add the halved strawberries to the bowl with the melon pieces.

Make the Sauce
In a blender, combine the miso paste, honey, rice vinegar, and fresh strawberries (1 cup) to create a smooth sauce. Blend until well combined and adjust the sweetness if needed, adding more honey to taste.

Assemble the Dish
Drizzle the strawberry miso sauce over the prepared fruit salad. Tear the sorrel leaves and sprinkle them over the salad for freshness. Add thin slices of fresh red chile on top for a spicy kick. Serve immediately and enjoy!
