Season the Steak
In a small bowl, mix together olive oil, garlic powder, salt, and black pepper. Rub this mixture all over the ribeye steaks, ensuring they are well coated. Let them sit at room temperature for about 30 minutes.

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain and pat dry the soaked potato strips. Fry them in batches until golden brown and crispy, about 4-5 minutes per batch. Remove from oil and place on paper towels to drain excess oil, then sprinkle with salt while still hot.

Plate the Dish
Slice the grilled steak against the grain and serve it alongside the crispy fries. Optionally, sprinkle fresh parsley on top of the steak and serve with chimichurri sauce on the side.
