Prepare the Scallops
Pat the sea scallops dry with paper towels, and season both sides with salt and black pepper. Set aside.

Prepare the Country Ham
Slice the country ham into thin strips or small pieces as desired, and set aside.

Prepare the Candy Onions
Peel and slice the candy onions into thin rings or half-moons.
Cooking

Sauté the Onions
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced candy onions and sauté for about 5-7 minutes, or until they are softened and lightly caramelized. Remove from the skillet and set aside.

Cook the Ham
In the same skillet, add the remaining tablespoon of olive oil and 1 tablespoon of butter. Once melted, add the sliced country ham and cook for about 3-4 minutes until heated through and slightly crispy. Remove and set aside with the onions.

Sear the Scallops
In the same skillet, add the remaining tablespoon of butter and allow it to melt over medium-high heat. Once hot, add the scallops in a single layer, making sure not to overcrowd the pan. Sear for about 2-3 minutes on each side until they are golden brown and opaque in the center. Remove from the skillet.
