Preparing the Melon Sorbet

Prepare the Melon
Cut the melon in half, remove the seeds, and scoop the flesh into a blender.

Blend the Sorbet Mixture
Add lemon juice, sugar, and water to the blender with the melon. Blend until smooth and well combined.

Freeze the Mixture
Pour the blended mixture into a shallow dish and freeze for about 4 hours, or until firm.

Scrape for Sorbet Texture
Once frozen, use a fork to scrape the mixture to create a fluffy sorbet texture.
Making the Lemon Marmalade

Prepare the Lemons
Wash the lemons thoroughly, then slice them thinly, removing any seeds.

Cool and Store
Remove from heat and let it cool. Store in a jar in the refrigerator until ready to use.
Preparing the Black Rice Shaved Ice

Cook the Black Rice
Rinse the black rice under cold water until the water runs clear. In a pot, combine the black rice and water. Bring to a boil, then reduce to a simmer and cook for about 30-40 minutes until tender.

Once cooked, drain the black rice and let it cool. Use a food processor or a blender to pulse the rice until it resembles shaved ice.

Drizzle sweetened condensed milk over the black rice shaved ice before serving.
