Gelato Base Preparation

Combine Milk and Cream
In a medium saucepan, combine 2 cups of whole milk and 1 cup of heavy cream. Heat over medium heat until the mixture is warm but not boiling.

Whisk Sugar and Egg Yolks
In a separate bowl, whisk together 3 tablespoons of granulated sugar and 4 large egg yolks until the mixture is pale and slightly thickened.

Cook the Mixture
Return the combined mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens enough to coat the back of a spoon (about 5-10 minutes).

Add Vanilla
Remove from heat and stir in 1 teaspoon of vanilla extract. Allow the mixture to cool to room temperature, then refrigerate for at least 2 hours or until chilled.
Flavoring the Gelato

Prepare Flavorings
Choose your desired flavoring. For strawberry gelato, puree 1 cup of fresh strawberries. For chocolate gelato, melt 1 cup of dark chocolate. For matcha gelato, mix 2 tablespoons of matcha powder with a bit of warm water to create a paste. For cookies and cream, crush 1 cup of cookies.

Churn the Gelato
Pour your flavored mixtures into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer to Freezer
Transfer the churned gelato to an airtight container and freeze for at least 4 hours or until firm.
