Preheat the Oven
Preheat your oven to 220°C (425°F) so that it reaches the right temperature when the batter is ready.

Grease the Ramekins
In a small bowl, combine 30 grams of unsalted butter and 1 tablespoon of cocoa powder. Use this mixture to generously grease four ramekins (about 6 oz each) to prevent sticking.

Melt Chocolate and Butter
In a heatproof bowl, combine 200 grams of dark chocolate and 100 grams of unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals until smooth. Stir well to combine, then let it cool slightly.
Mixing the Batter

Whisk Sugar and Eggs
In a mixing bowl, whisk together 150 grams of granulated sugar, 2 large eggs, and 2 large egg yolks until the mixture is thick and pale.

Add Flour and Salt
Sift in 50 grams of all-purpose flour and add a pinch of salt. Fold the mixture gently until fully combined and smooth.

Add Vanilla
Stir in 1 teaspoon of vanilla extract into the batter until evenly distributed.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Bake
Place the ramekins on a baking sheet and bake in the preheated oven for about 12-14 minutes, or until the edges are firm but the center is still soft.
Serving

Cool Slightly
Remove the ramekins from the oven and let them cool for about 1 minute.

Invert and Serve
Carefully run a knife around the edges of each cake, then invert them onto individual plates. Serve immediately while the centers are still molten, optionally with ice cream or whipped cream.
