Fried Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Batter
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. In another bowl, whisk together the eggs and buttermilk.

Coat the Calamari
Dunk each calamari ring first in the egg mixture, then coat it in the flour mixture, shaking off any excess flour.

Heat the Oil
In a deep skillet or fryer, heat vegetable oil to 350°F (175°C).

Fry the Calamari
Fry the coated calamari rings in batches for about 2-3 minutes or until golden brown. Remove them with a slotted spoon and drain on paper towels.

Make the Sauce
Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar to the saucepan. Stir to combine and bring to a simmer.

Add Fresh Basil
Once the sauce is simmering, stir in the fresh basil leaves and cook for an additional 5-10 minutes until the sauce thickens slightly.
