Method

Beef Tartare Assembly

  1. 1

    Prepare the beef

Finely chop the beef tenderloin into small cubes. Place it in a mixing bowl.

  2. 2

    Mix the ingredients

Add the egg yolk, Dijon mustard, Worcestershire sauce, capers, shallots, chives, olive oil, salt, and black pepper into the bowl with the beef. Mix gently until well combined.

  3. 3

    Taste and adjust

Taste the mixture and adjust seasoning with more salt or pepper if necessary.

Wild Rice Preparation

  1. 4

    Cook the wild rice

Rinse wild rice under cold water. In a pot, combine wild rice, water, and salt. Bring to a boil, then reduce heat to low and cover. Simmer for about 45 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

Daikon Garnish Preparation

  1. 5

    Prepare the daikon

Julienne the daikon radish into thin strips. In a bowl, combine the daikon, rice vinegar, and sugar. Toss to coat and let it marinate for 15 minutes.

Plating

  1. 6

    Assemble the dish

On a plate, place a mound of wild rice, top it with the beef tartare mixture, and garnish with the marinated daikon. Finally, sprinkle the grated bottarga over the top.

  2. 7

    Serve

Serve immediately with additional black pepper and olive oil on the side, if desired.
