Spring Roll Filling

    Prepare noodles

    Place dried bean thread (glass) noodles in a bowl and pour enough hot water to cover. Soak 6–8 minutes until softened but still slightly chewy. Drain, rinse under cold water, then cut into 6–8 inch lengths with scissors. Set aside.

    Shred vegetables

    Peel and julienne carrots to yield about 1.5 cups. Core and finely shred cabbage to yield 2 cups. If using mushrooms, thinly slice. Pat mung bean sprouts dry and trim any long tails.

    Cook filling

    Heat 2 tablespoons neutral oil in a large skillet or wok over medium-high heat. Add minced garlic and sliced shallot; sauté 30–45 seconds until fragrant. Add shredded carrot and cook 1–2 minutes, then add cabbage and mushrooms (if using) and stir-fry 2–3 minutes until vegetables are tender-crisp. Add drained bean thread noodles and mung bean sprouts and toss to combine.

    Season filling

    Stir in 1 tablespoon light soy sauce, 1/2 teaspoon sesame oil, 1/4 teaspoon pepper and 1/2 teaspoon salt (adjust to taste). Cook another 1–2 minutes until flavors meld and most moisture has evaporated. Remove from heat and let the mixture cool to near room temperature (10–15 minutes) so it won't steam the wrappers.

Wrappers & Sealing

    Make sealing paste

    Whisk together 2 tablespoons all-purpose flour with 3 tablespoons water until a smooth paste forms. This will act as the glue for sealing the rolls.

    Assemble spring rolls

    Lay one wheat spring roll wrapper on a clean work surface with one corner pointing toward you (diamond shape). Place about 2–3 tablespoons of filling near the corner closest to you, forming a log about 1 inch from the edge and centered horizontally. Fold the corner over the filling, then fold both side corners inward snugly. Roll the wrapper away from you toward the far corner until just before the edge, brush the far corner with a thin line of flour paste, and finish rolling to seal. Repeat with remaining wrappers and filling; you should get about 12 rolls. Keep assembled rolls covered with a damp towel while you work to prevent drying.

Frying

    Heat oil

    Pour neutral oil into a deep, heavy-bottomed pot or wok to a depth of 2–3 inches (about 1 liter). Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of wrapper — it should sizzle and rise slowly without browning instantly.

    Fry rolls

    Working in batches (do not overcrowd), gently lower 3–4 spring rolls into the hot oil. Fry 3–4 minutes, turning occasionally, until golden brown and crisp. Adjust heat as needed to maintain 325–350°F so the filling cooks through without burning the wrapper. Remove with a slotted spoon and drain on a wire rack or paper towels. Repeat with remaining rolls.

    Finish

    If desired, keep fried spring rolls in a warm oven (200°F / 95°C) on a wire rack to stay crisp while you finish frying the rest.

Sweet Sour Dipping Sauce

    Combine and dissolve sugar

    In a small saucepan, combine 1/2 cup rice vinegar, 1/2 cup water, and 3/4 cup granulated sugar. Add 2 tablespoons ketchup and 1 teaspoon soy sauce. Stir and bring to a gentle simmer over medium heat until the sugar dissolves.

    Thicken sauce

    Mix 1 teaspoon cornstarch with 1 tablespoon water to make a slurry. Slowly whisk the slurry into the simmering sauce and cook 1–2 minutes until slightly thickened. Taste and add chili flakes if you want a spicy kick. Remove from heat and let cool slightly; sauce will thicken a bit more as it cools.

Serve

    Arrange hot spring rolls on a platter with lime wedges and cilantro if using. Serve immediately with the sweet-sour dipping sauce on the side.
