    In a medium mixing bowl, beat the softened cream cheese with a spatula until smooth and slightly fluffy.

    Add the finely chopped imitation crab meat, thinly sliced scallions, minced garlic, soy sauce, sesame oil, and sugar to the cream cheese. Fold gently until evenly combined. Taste and adjust seasoning with a pinch of white or black pepper and more soy or sugar if desired. The filling should be thick but spreadable. Chill 15–20 minutes if it feels too soft for shaping.

Wrappers & Assembly

    Set up an assembly station: a clean work surface, a small bowl with the beaten egg (or water) for sealing, and the wonton wrappers stacked and covered with a slightly damp towel to prevent drying.

    Place one wonton wrapper on the work surface with a corner pointing toward you (diamond orientation). Put about 1 heaping teaspoon (approximately 8–10 g) of the filling in the center. Do not overfill—overfilling prevents a good seal.

    Brush the edges of the wrapper lightly with the beaten egg (or water). Fold the wrapper over diagonally to form a triangle, pressing out any air and sealing the edges tightly. For the classic Crab Rangoon shape, bring the two outer corners of the triangle together, overlapping slightly, and press to seal, forming a little purse or folded triangle. Repeat with remaining wrappers and filling. Place assembled wontons on a baking sheet lined with parchment, keeping them covered with a damp towel until ready to fry.

Frying

    Pour the oil into a medium heavy-bottomed pot or a deep fryer so it is about 2–3 inches deep. Heat the oil over medium-high heat until it reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of wrapper—if it sizzles and browns in about 30–40 seconds, the oil is ready.

    Fry the assembled Crab Rangoon in batches, 4–6 at a time, without crowding. Gently lower them into the hot oil and fry, turning once, until golden brown and crisp—about 2 to 3 minutes per batch. Adjust heat as needed to maintain 325–350°F; too hot will burn the exterior before the filling warms through.

    Using a slotted spoon, transfer fried rangoon to a wire rack set over a baking sheet or to paper towels to drain briefly. Let cool 1–2 minutes before serving so filling isn’t excessively hot. Repeat with remaining wontons.

Sweet & Sour Dipping Sauce

    If using store-bought sweet chili or sweet & sour sauce, pour into a small serving bowl. Taste and, if desired, stir in 1 teaspoon soy sauce and 1 teaspoon rice vinegar to adjust saltiness and brightness.

    Serve the warm Crab Rangoon immediately with the dipping sauce on the side.
