Shrimp Filling

    Prepare shrimp

    Pat shrimp dry with paper towels. If shrimp are large, cut each into two lengthwise pieces or leave whole depending on wrapper size so each piece fits comfortably on a wrapper.

    Mince aromatics

    Finely mince the garlic and grate or finely mince the ginger. Thinly slice the green onions (white and green parts).

    In a bowl, combine shrimp with minced garlic, ginger, sliced green onion, soy sauce, sesame oil, white pepper, cornstarch and 1/2 teaspoon salt. Toss until evenly coated. Let marinate at room temperature for 10–15 minutes (no more than 30 minutes).

Wrappers & Assembly

    Set up an assembly station: spring roll wrappers stacked, a small bowl with beaten egg mixed with 1 teaspoon water (egg wash) and a damp towel to keep unused wrappers from drying out.

    Place one wrapper on a clean surface in diamond orientation (one corner toward you). Spoon 1 shrimp (or a folded shrimp piece) along with a small amount of filling near the bottom third of the wrapper, leaving space at edges. Do not overfill — aim for 1 shrimp per roll for a neat, shrimp-centric 'bikini' appearance.

    Fold the bottom corner up over the shrimp, then fold both side corners toward the center snugly, and roll away from you until about halfway. Brush the top edge with egg wash and finish rolling to seal, forming a tight, compact roll. Repeat until all shrimp are wrapped. Keep finished rolls covered with a damp towel.

    If using the optional batter for a light extra coating, whisk together 1/2 cup flour, 1/2 cup cold water and 1/4 tsp salt until just combined. The batter should be thin and slightly lumpy. Transfer to a shallow bowl for dipping.

Frying

    Heat oil in a deep pot or deep-fryer to 350°F (175°C). Use a thermometer to maintain temperature. If you don't have a thermometer, test by dropping a small piece of wrapper — it should sizzle and rise immediately.

    If using batter: dip each wrapped shrimp roll quickly into the batter to coat lightly, letting excess drip off. If not using batter, proceed with the wrapped rolls as-is.

    Fry in batches (do not overcrowd) for 2–3 minutes per side or until golden brown and crisp. Shrimp cooks quickly; total frying time per roll will be about 3–5 minutes depending on size. Maintain oil temperature around 325–350°F (160–175°C) for even cooking and minimal oil absorption.

    Use a slotted spoon to transfer fried rolls to a wire rack or paper towels to drain. Allow to rest 1–2 minutes before serving so fillings settle and exterior stays crisp.

Sweet Chili Sauce & Serving

    If using store-bought sweet chili sauce, warm slightly if desired. To make a quick homemade version: combine 1 cup store-bought sweet chili sauce or 1/2 cup rice vinegar, 1/2 cup sugar, 2 tbsp water, 1 tbsp fish sauce, 1 tsp sambal or chili flakes, and simmer until slightly thickened, then cool.

    Arrange Shrimp Bikini on a platter, garnish with chopped cilantro and lime wedges. Serve immediately with sweet chili sauce for dipping.
