    Clean the Octopus

    Clean the octopus by rinsing it under cold water. Remove the beak and any remaining innards. Pat it dry with paper towels.

    Cook the Octopus

    In a pot of boiling salted water, cook the octopus for about 45 minutes to 1 hour, or until fork-tender. Remove and let it cool. Cut the tentacles into bite-sized pieces.

    Add the fish or vegetable stock, and simmer for an additional 15 minutes until the sauce thickens slightly.
