Winemaking Process
1. Harvesting Grapes
Harvest 2 kg of ripe Pinot Gris grapes from the vineyard. Ensure they are free from any rot or disease.
2. Crushing Grapes
Crush the harvested grapes to release the juice. You can use a wine press or crush them manually, ensuring the skins are broken to extract maximum flavor.
3. Adding Honeysuckle
Add 100 grams of honeysuckle to the crushed grape juice. This will enhance the aroma and flavor profile with floral notes.
4. Diluting with Water
Add 1 liter of water to the mixture to balance the sugar content and acidity. Mix well.
5. Pitching Yeast
Sprinkle 10 grams of yeast over the mixture. Allow it to sit for about 15 minutes before stirring gently to activate the fermentation process.
6. Fermentation
Cover the mixture with a clean cloth and let it ferment at room temperature for 7-10 days. Stir daily and monitor the fermentation process.
7. Adding Sugar
After fermentation, add 200 grams of sugar to the mixture to enhance sweetness and balance the acidity. Stir until fully dissolved.
8. Filtering and Bottling
Filter the wine to remove solids and transfer it into clean, sterilized bottles. Seal with corks and store in a cool, dark place.
9. Aging
Let the wine age for at least 3-6 months to develop its flavors before tasting. Serve chilled.
