Preparation of Lamb

Prepare the Marinade
In a small bowl, mix together olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper to create a marinade.

Marinate the Rack of Lamb
Rub the marinade all over the rack of lamb, ensuring it is well coated. Cover and let it marinate in the refrigerator for at least 1 hour, preferably overnight.

Preheat your oven to 200°C (400°F).

Sear the Lamb
Heat a skillet over medium-high heat. Add the marinated rack of lamb, fat-side down, and sear for about 3-4 minutes until browned. Flip and sear the other side for another 2-3 minutes.

Transfer the seared rack of lamb to a roasting pan. Roast in the preheated oven for about 25-30 minutes for medium-rare, or until the internal temperature reaches 57°C (135°F).
