Molten Butter Cake

    Prepare the Batter

    Preheat your oven to 375°F (190°C) and grease a ramekin or muffin tin. In a medium bowl, melt the unsalted butter and mix it with granulated sugar until well combined. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

    Combine Dry Ingredients

    Sift together the all-purpose flour and salt. Gradually fold the dry ingredients into the butter mixture until just combined. Be careful not to overmix.

    Bake

    Pour the batter into the prepared ramekin or muffin tin, filling each about 3/4 full. Bake in the preheated oven for 12-15 minutes, until the edges are firm but the center is still soft. Remove from the oven and let cool slightly.

Home-made Vanilla Ice Cream

    Prepare the Base

    In a medium saucepan, combine heavy cream, whole milk, and granulated sugar. If using a vanilla bean, split it and scrape the seeds into the mixture. Heat over medium heat until the sugar dissolves and the mixture is warm.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are light and frothy. Slowly pour in the warm cream mixture, whisking constantly to temper the eggs.

    Cook the Mixture

    Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon. Remove from heat and strain through a fine mesh sieve to remove any lumps. Chill completely before churning in an ice cream maker.

Lemon Anglaise

    Heat Cream

    In a saucepan, heat the heavy cream and granulated sugar over medium heat until the sugar dissolves. Do not boil.

    Whisk Yolks

    In a separate bowl, whisk the egg yolks until they are light. Slowly pour the warm cream mixture into the yolks, whisking constantly.

    Thicken Sauce

    Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened. Stir in the lemon juice and lemon zest. Strain if desired and let cool.

Milk Crumble

    Mix Ingredients

    In a bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

    Bake Crumble

    Spread the crumble mixture evenly on a baking sheet and bake at 350°F (175°C) for 10-15 minutes or until golden brown. Let cool before serving.
