Miso Glaze Directions

    Prepare the Miso Glaze

    In a small saucepan, combine white miso paste, mirin, sake, brown sugar, and soy sauce. Whisk together and cook over low heat until the sugar dissolves and the mixture is smooth. Set aside to cool.

Taro Croquette Directions

    Cook the Taro

    Peel and cube the taro root. Boil in salted water for about 15-20 minutes until tender. Drain and mash the taro until smooth.

    Form the Croquettes

    In a mixing bowl, combine the mashed taro, all-purpose flour, egg, salt, and pepper. Mix well until a dough forms. Shape into small patties.

    Coat the Croquettes

    Dredge each patty in panko breadcrumbs until fully coated.

    Fry the Croquettes

    Heat oil in a frying pan over medium heat. Fry the croquettes for 3-4 minutes on each side until golden brown. Drain on paper towels.

Sake Beurre Blanc Directions

    Prepare the Sauce

    In a saucepan, combine sake and finely chopped shallots. Bring to a simmer and reduce until only a few tablespoons of liquid remain.

    Emulsify the Butter

    Lower the heat and slowly whisk in the butter, a few cubes at a time, until the sauce is creamy and emulsified. Stir in heavy cream, season with salt and pepper, and keep warm.

Bok Choy Directions

    Sauté the Bok Choy

    Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute. Add halved bok choy, season with salt and pepper, and sauté for about 5-7 minutes until tender.

Shiitake Directions

    Sauté the Shiitake Mushrooms

    In the same skillet, add sliced shiitake mushrooms. Drizzle with soy sauce and sesame oil. Sauté for about 5-7 minutes until soft and browned. Season with salt and pepper.
