Method

Cooking the Lobster

    Boil the Lobster

    Bring a large pot of salted water to a boil. Add the whole Maine lobsters and cover the pot. Boil for about 8-10 minutes until the lobsters turn bright red and are cooked through. Remove them from the pot and let them cool.

    Extract the Meat

    Once the lobsters are cool enough to handle, crack the shells and remove the lobster meat. Chop the meat into bite-sized pieces and set aside.

Preparing Pommes Purée

    Cook the Potatoes

    Peel the Russet potatoes and cut them into even chunks. Place the potatoes in a large pot, cover with cold water, add 1 tsp of salt, and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add 1 cup of unsalted butter and 1 cup of heavy cream. Mash until smooth and creamy. Season with salt and white pepper to taste.

Making Chive Butter

    Prepare the Chive Butter

    In a small bowl, combine 1 stick of softened unsalted butter, finely chopped fresh chives, 1 tbs of lemon juice, and salt to taste. Mix until well combined and creamy.

Plating the Dish

    Assemble the Dish

    On a plate, create a bed of pommes purée using a spoon. Top with the chopped lobster meat and drizzle with the chive butter. Serve immediately and enjoy!
