    Chop and Dice

    Chop the lobster meat into bite-sized pieces. Peel and dice the potatoes, chop the onion and celery, and dice the carrots. Mince the garlic.

Cooking

    Sauté Vegetables

    In a large pot, heat a tablespoon of oil over medium heat. Add the onion, celery, carrots, and garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Potatoes and Stock

    Stir in the diced potatoes, chicken or seafood stock, and white wine. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the potatoes are tender.

    Add Lobster and Seasonings

    Add the chopped lobster meat, heavy cream, salt, black pepper, thyme, bay leaves, paprika, and lemon juice to the pot. Stir well to combine.

    Continue to simmer for an additional 10-15 minutes, allowing the flavors to meld together. Stir occasionally.

    Remove the bay leaves from the chowder. Serve hot, garnished with chopped parsley and lemon wedges.
