Method

Prepare the Onions

    Peel and slice the yellow onions into thin rings.

    In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 15-20 minutes.

    Add the brown sugar, balsamic vinegar, salt, and black pepper to the skillet. Stir well and cook for an additional 5 minutes until the onions are well-coated and the mixture is syrupy.

Make the Gruyère Mornay Sauce

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute until bubbly.

    Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens, about 3-5 minutes.

    Incorporate the Cheese

    Remove the saucepan from the heat and stir in the grated Gruyère cheese, nutmeg, and salt until the cheese is melted and the sauce is smooth.

Prepare the Spiced Bacon

    Place the bacon slices on a baking sheet. Sprinkle brown sugar and black pepper over the bacon.
