Method

Preparation

  1. 1

    Bring Steaks to Room Temperature

Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

  2. 2

    Preheat Your Skillet

Place a heavy skillet (preferably cast iron) over medium-high heat and allow it to preheat for about 5 minutes.

Cooking

  1. 3

    Season the Steaks

Rub both sides of the filet mignon steaks with olive oil, then season generously with salt and black pepper.

  2. 4

    Sear the Steaks

Once the skillet is hot, carefully place the steaks in the skillet. Sear them for about 4-5 minutes on the first side without moving them.

  3. 5

    Flip and Add Flavors

Flip the steaks and cook for another 4-5 minutes for medium-rare. If using, add the butter and fresh rosemary to the pan at this point, basting the steaks with the melted butter.

  4. 6

    Check for Doneness

Use a meat thermometer to check the internal temperature. For medium-rare, aim for 130-135°F (54-57°C). Adjust cooking time as necessary.

Resting

  1. 7

    Let the Steaks Rest

Remove the steaks from the skillet and let them rest on a plate for 5-10 minutes. This allows the juices to redistribute throughout the meat.

Serving

  1. 8

    Slice and Serve

Slice the filet mignon against the grain and serve immediately. Optionally, drizzle with the pan juices or serve with your favorite side dishes.
