Method

Preparing the Marinade

  1. 1

    Make the Marinade

In a bowl, combine minced garlic, chopped rosemary, chopped thyme, lemon juice, and honey. Mix well.

  2. 2

    Marinate the Pork Chops

Place the Duroc pork chops in a resealable plastic bag or shallow dish. Pour the marinade over the pork chops, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

Cooking the Pork Chops

  1. 3

    Season the Pork Chops

Remove the pork chops from the marinade and pat dry with paper towels. Season both sides with salt and black pepper.

  2. 4

    Sear the Pork Chops

In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side, or until a nice brown crust forms and the internal temperature reaches 145°F (63°C).

  3. 5

    Rest the Pork Chops

Remove the pork chops from the skillet and let them rest for 5 minutes before serving.

Preparing the Vegetable Side

  1. 6

    Prepare the Vegetables

In a mixing bowl, toss the trimmed asparagus and halved cherry tomatoes with olive oil, salt, and black pepper.

  2. 7

    Roast the Vegetables

Spread the vegetables on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 15-20 minutes, or until tender and slightly charred.

Serving

  1. 8

    Plate the Dish

Serve the seared Duroc pork chops alongside the roasted asparagus and cherry tomatoes. Enjoy your meal!
