Burger Patty Preparation

    Prepare the Beef

    Begin by taking the dry-aged beef out of the refrigerator and letting it sit at room temperature for about 30 minutes to ensure even cooking.

    Form the Patties

    Divide the beef into 4 equal portions (about 6 ounces each). Gently form each portion into a patty, about ¾ inch thick. Press a small indentation in the center of each patty to prevent it from puffing up while cooking.

    Season the Patties

    Generously season both sides of each patty with kosher salt and freshly ground black pepper.

Cooking the Burgers

    Preheat the Grill or Skillet

    Preheat your grill or skillet over medium-high heat. Ensure it is hot enough to create a good sear on the burgers.

    Cook the Patties

    Place the patties on the grill or skillet and cook for about 4-5 minutes on one side, until a crust forms. Flip and cook for another 3-4 minutes for medium-rare, or longer if you prefer a more well-done burger.

    If you’re adding cheese, place a slice on each patty during the last minute of cooking to allow it to melt.

Assembling the Burger

    On the bottom half of each bun, place a layer of lettuce, followed by the cooked patty (with cheese if you used it). Add slices of tomato, onion, and pickles to taste. Spread ketchup and mustard on the top half of the bun before placing it on the burger.
