Crab Cake Preparation

    Prepare the Crab Mixture

    In a large mixing bowl, gently combine the fresh crab meat, breadcrumbs, mayonnaise, Dijon mustard, Worcestershire sauce, and egg. Mix until just combined. Be careful not to break up the crab meat too much.

    Add Seasonings

    Stir in the chopped green onions, Old Bay seasoning, salt, and black pepper. Mix gently to combine all the flavors without overworking the crab.

    Form the Cakes

    Using your hands, form the crab mixture into patties, about 3 inches in diameter and 1 inch thick. Place the formed cakes on a baking sheet lined with parchment paper.

    Chill the Cakes

    Refrigerate the crab cakes for at least 30 minutes to help them hold their shape during cooking.

    Cook the Crab Cakes

    In a large skillet, heat the vegetable oil over medium heat. Once hot, add the crab cakes to the skillet in batches, being careful not to overcrowd the pan. Cook for about 4-5 minutes on each side or until golden brown and crispy.
