Method
Blistered Tomatoes

Prepare Tomatoes
In a large skillet, heat the olive oil over medium-high heat. Add the cherry tomatoes to the skillet.

Blister Tomatoes
Cook the tomatoes, stirring occasionally, for about 5-7 minutes until they are blistered and soft. Season with salt and pepper. Remove from heat and stir in fresh basil.
Corn Purée

Cook Corn
In a saucepan, combine fresh corn kernels and heavy cream. Bring to a simmer over medium heat and cook for 10 minutes until the corn is tender.

Blend Purée
Transfer the corn mixture to a blender, add butter, salt, and pepper. Blend until smooth. If too thick, add a little water to reach desired consistency.

Prepare Batter
In a mixing bowl, combine cornmeal, flour, baking powder, sugar, and salt. In a separate bowl, whisk together the egg and milk. Combine the wet ingredients with the dry ingredients and fold in green onions.

Fry Hushpuppies
Heat the oil in a deep frying pan over medium-high heat. Once hot, drop spoonfuls of the batter into the oil and fry until golden brown on all sides, about 3-4 minutes. Remove and drain on paper towels.
