Preparation

    Prepare the Cucumber

    Wash the cucumber thoroughly. Cut it into thin slices, about 1/8 inch thick. Set aside for garnish.

    Prepare the Lemon

    Wash the lemon and cut it in half. Squeeze the juice from one half into a separate mixing jug, and slice the other half into wedges for garnish.

Mixing the Tonic

    Combine Base Ingredients

    In a large pitcher, pour 2 cups of Pimm's No. 1 and 1 tablespoon of absinthe. Stir gently to combine.

    Add Fresh Ingredients

    Add the cucumber slices and the freshly squeezed lemon juice to the pitcher. Stir gently to mix the ingredients.

    Mix with Tonic Water

    Slowly pour in 3 cups of tonic water into the pitcher. Stir gently to combine without losing carbonation.

Serving

    Garnish and Serve

    Fill glasses with ice cubes and pour the prepared mixture over the ice. Garnish each glass with the lemon wedges and additional cucumber slices. Serve immediately.
