Flat Iron Steak

Prepare the Steak
Take the flat iron steak out of the refrigerator and let it rest at room temperature for about 30 minutes.

Rest the Steak
Remove the steak from the heat and let it rest for 5-10 minutes before slicing.
Chimichurri Sauce

Prepare the Ingredients
Finely chop the parsley, cilantro, and garlic cloves.

Mix the Sauce
In a bowl, combine the chopped herbs and garlic with red wine vinegar, olive oil, red pepper flakes, and salt. Mix well.

Let it Rest
Allow the chimichurri to sit for at least 15 minutes to let the flavors meld together.
Shoestring Fries

Prepare the Potatoes
Peel the russet potatoes and cut them into thin shoestring shapes.

Soak the Fries
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

Heat the Oil
In a deep pot, heat vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add a handful of fries to the hot oil and fry until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.

Sprinkle the fries with salt to taste while they are still hot.
