In a large pot, heat the whole milk over medium heat until it reaches about 190°F (88°C), stirring occasionally to prevent scorching.

Once the milk has reached the desired temperature, remove it from the heat. Slowly add the white vinegar or lemon juice while gently stirring the milk. Let it sit for about 10 minutes, allowing the curds to form.

Line a colander with cheesecloth and carefully pour the curds and whey mixture into the colander. Rinse the curds under cold running water to remove the vinegar or lemon flavor.

4. Step 4: Season the Cheese

Transfer the curds back to a bowl. Add the salt and gently mix to combine. Adjust seasoning to taste.

5. Step 5: Chill and Serve
