Mousse Preparation

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave in 30-second intervals until smooth. Allow it to cool slightly.

Whip the Egg Whites
In a separate bowl, separate the egg whites from the yolks. Using an electric mixer, beat the egg whites on medium speed until foamy. Gradually add the granulated sugar and a pinch of salt, and continue to beat until stiff peaks form.

Whip the Cream
In a separate bowl, whip 300 ml of heavy whipping cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

Chill the Mousse
Spoon the mousse into serving cups or bowls. Cover with plastic wrap and refrigerate for at least 2 hours or until set.

Prepare the Whipped Cream
In a mixing bowl, combine 100 ml of heavy whipping cream, 2 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract. Beat with an electric mixer on medium-high speed until soft peaks form.

Top the Mousse
Once the mousse is set, remove it from the refrigerator and top each serving with a generous dollop of whipped cream before serving.
