Method

Sandwiches - Kelly Club (assembly and prep)

    Prepare bread and mayo

    Split the hoagie roll horizontally without cutting all the way through (or fully split if preferred). Evenly spread 2 tablespoons mayonnaise on the inside of the top and bottom halves.

    Layer meats and cheese

    On the bottom half, arrange 3 oz smoked turkey in a single even layer, slightly overlapping. Add 2 oz smoked ham on top of the turkey. Place 2 slices of cheddar cheese over the ham so they slightly cover the meat.

    Add bacon and produce

    Lay 2 cooked crisp bacon slices on top of the cheese. Add 2 leaves of romaine or leaf lettuce on one side of the sandwich, then top with 2 tomato slices.

    Season and finish

    Lightly sprinkle 1/4 tsp salt and 1/8 tsp freshly ground black pepper over the tomato. Close the sandwich by bringing the top half of the roll over. If desired, press gently and cut the sandwich on the diagonal into two halves.

Side - Fries

    Preheat oven to 425°F (220°C). Cut the medium russet potato into 1/4–1/2 inch fries (leave skin on if desired). Place cut fries in a bowl, toss with 2 tablespoons oil, 1/2 tsp salt, and 1/8 tsp black pepper until evenly coated. Spread in a single layer on a parchment-lined baking sheet with space between pieces. Bake 20–28 minutes, turning once halfway, until golden and crisp at the edges. Remove and drain briefly on paper towels, adjust seasoning to taste.

    Pan-fry alternative (if not baking)

    Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add prepared fries in a single layer (do in batches if necessary). Fry, turning occasionally, until browned and cooked through, about 10–15 minutes depending on thickness. Transfer to a paper towel-lined plate and season with salt and pepper.

    Frying in deep oil (restaurant-style)

    Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry prepared potato strips in batches 3–5 minutes until golden and cooked. Drain on paper towels and season with salt immediately.

    Serve

    Place the assembled Kelly Club sandwich on a plate, serve with a generous portion of fries on the side. Provide condiments as desired (ketchup, extra mayo, or mustard).
