Horseradish Sauce

In a medium bowl combine 1 cup mayonnaise, 3 tbsp prepared horseradish, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, 1 tsp fresh lemon juice, 1 tsp salt and 1 tsp black pepper. Whisk until smooth and taste; adjust horseradish or salt if desired. Chill in refrigerator while assembling sandwiches so flavors meld.

If frying: heat vegetable oil in a heavy pot or deep fryer to 350°F (175°C). Fry fries in batches 3–5 minutes (for frozen) until golden and crisp. Drain on paper towels and season with kosher salt and chopped parsley if using.

If baking: preheat oven to 425°F (220°C). Toss fries with 2 tbsp oil, spread in a single layer on a rimmed baking sheet, bake 18–28 minutes, turning once, until crisp and golden. Season with kosher salt and parsley.

Sandwich Assembly & Toasting

Preheat oven broiler or a sandwich press to medium-high. If using broiler, place a rack about 6 inches from the heat.

Split the 4 hoagie rolls lengthwise, leaving a hinge if you prefer. Lightly spread 1/2 tbsp softened butter on the outside cut face of each top and bottom (for 4 rolls use total 4 tbsp). If you like a touch of tang, spread about 1/2 tsp yellow mustard on the inside bottom of each roll (optional).

Layer 4 oz sliced corned beef on the bottom half of each roll (evenly distributing the 16 oz). Top the corned beef with 2 oz sliced sharp cheddar each (total 8 oz).

Place assembled open sandwiches under the broiler or in the sandwich press just until the cheese melts and bread edges begin to toast, about 2–4 minutes under broiler or 3–5 minutes in press. Watch closely to avoid burning.

Remove sandwiches from heat. On the top half of each roll spread about 2 tbsp prepared horseradish sauce per sandwich (use sauce chilled from earlier). On top of the bottom halves (cheese side) portion 1/2 cup prepared coleslaw per sandwich.

Sprinkle 1/4 cup crispy fried onion strings over the coleslaw on each sandwich (use total 1 cup). Close the sandwiches and press lightly to secure filling.

Cut each hoagie in half on the diagonal if desired and serve immediately with hot fries on the side and extra horseradish sauce for dipping.
