Cajun Candied Walnuts

    Toast and candy walnuts

    Line a small baking sheet with parchment paper and set aside. In a small nonstick skillet over medium heat combine the granulated sugar and unsalted butter. Stir until the butter melts and the sugar begins to liquefy (about 1 minute). Add the walnuts, Cajun seasoning, and salt; stir continuously to coat the nuts with the caramelized sugar and spices, about 2 to 3 minutes. Watch carefully to avoid burning. Spread the coated walnuts in a single layer on the prepared baking sheet and allow to cool completely (about 10 minutes). When cool, break any large clusters into bite-sized pieces.

Dressing

    Emulsify dressing

    In a small bowl or jar add the balsamic vinegar, Dijon mustard, honey, salt, and black pepper. Whisk briefly to combine. While whisking, slowly drizzle in the olive oil until the dressing is emulsified and slightly thickened (or close the jar and shake vigorously). Taste and adjust seasoning as needed.

Salad Assembly

    Prepare produce and cheese

    Core the Granny Smith apple and thinly slice into half-moons or thin wedges (leave the skin on for texture). Thinly slice the red onion into rings or half-rings. If using large croutons, break to bite-size pieces. Crumble the Gorgonzola if not pre-crumbled.

    Toss salad

    Place the mixed salad greens in a large bowl. Add the sliced apple, red onion, croutons, and about half of the crumbled Gorgonzola. Drizzle approximately half of the dressing over the salad (you can add more to taste) and toss gently but thoroughly to combine so all ingredients are lightly coated.

    Finish and serve

    Transfer the tossed salad to a serving bowl or divide among plates. Sprinkle the remaining Gorgonzola on top and scatter the Cajun candied walnuts over the salad for crunch and sweet-spicy contrast. Serve immediately, and pass extra dressing on the side.
