Tuna Salad

    Open and drain the canned albacore tuna well. Transfer tuna to a medium mixing bowl and flake with a fork until mostly broken up but still a little chunky.

    Add mayonnaise, Dijon mustard, finely minced red onion, diced celery, chopped capers, and lemon juice to the bowl with the tuna.

    Season with sea salt and freshly ground black pepper. Stir gently until combined but not overworked — the salad should remain slightly chunky. Taste and adjust seasoning (add up to 1 tsp more lemon juice or ½ tsp more salt if desired).

    Cover and refrigerate while you prepare bread and other components if not assembling immediately (can sit up to 2 hours).

Sandwich Assembly & Grilling

    Prepare bread

    Butter one side of each rye slice evenly with softened unsalted butter. The buttered side will be the outside that contacts the skillet; this ensures a golden crisp exterior.

    Place 4 slices of rye, buttered side down, on a work surface. On each slice, divide the tuna salad evenly (about 3 oz of tuna mixture per sandwich). Spread it into an even layer, leaving a small margin at the edges so it won't spill.

    Top the tuna on each sandwich with a layer of thin tomato slices (about 2–3 slices per sandwich) arranged to cover, then add a generous handful of alfalfa sprouts over the tomatoes. Finish with 2 oz (about 1/4 cup) of sliced or shredded sharp cheddar on each sandwich.

    Place the remaining 4 buttered rye slices on top, buttered side up, forming four assembled sandwiches.

    Heat a large skillet or griddle over medium heat until hot (about 3–4 minutes). If using a nonstick skillet, you can wipe a thin film of additional butter in the pan if desired.

    Place two sandwiches in the skillet, cook for 3–4 minutes until the bread is golden brown and the cheese begins to melt. Press each sandwich gently with a spatula or use a heavy pan on top to help contact and melting.

    Carefully flip the sandwiches with a spatula and cook the second side for another 3–4 minutes, until golden and the cheese is fully melted. Reduce heat slightly if the bread is browning too quickly before the cheese melts.

    Transfer finished sandwiches to a cutting board and let rest 1 minute, then cut each sandwich in half on the diagonal. Repeat with the remaining two sandwiches.

    Serve immediately while hot and melty.
