Burger
Form and season patty
Divide beef and form into a loosely packed 4 oz (0.4 lb) ball and flatten into a hand-pressed patty about 3.5–4 inches across and roughly 1/2 inch thick. Do not overwork. Season both sides with kosher salt and freshly ground black pepper just before cooking.
Cook the patty
Place the hand-pressed patty on the hot griddle. Press down once immediately with a spatula to ensure good contact (creates a thin crust). Cook for 2–3 minutes without moving to develop a sear. Flip the patty and cook another 60–90 seconds. Place 1 slice of American cheese on the patty, cover briefly (or tent with a lid) for 20–30 seconds to melt the cheese.
French fries
Prepare potatoes
Cut the potato into matchstick fries about 1/4 inch thick. Rinse under cold water until water runs clear to remove excess starch, then pat thoroughly dry with paper towels.
Fry the fries
In a medium skillet or small pot, heat about 1 cup vegetable oil to 350°F (moderately hot). If you don't have a thermometer, test with a small piece of potato — it should sizzle steadily. Fry the potatoes in a single layer (work in a small batch given the oil amount) for 3–4 minutes until golden and crisp. Remove with a slotted spoon to a paper towel-lined plate.
Season
While still hot, sprinkle fries with 1/4 tsp kosher salt and toss gently to distribute. Serve next to the burger.
Serving
Plate the Lil ' Griz with the fries on the side. Serve immediately while the burger is hot and the fries are crisp. Estimate one burger and a modest portion of fries per serving.
