Prepare the Pork
Rub the pork shoulder with smoked paprika, cumin, salt, and black pepper. Place the pork in a slow cooker.

Add Aromatics
Chop the onion and garlic, then add them to the slow cooker along with the apple cider vinegar.

Cook the Pork
Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Mix in BBQ sauce until the pork is well-coated.

Prepare Coleslaw
In a bowl, mix shredded cabbage and carrots with mayonnaise, vinegar, salt, and pepper to taste.

Serve
Serve the pulled pork on a bun topped with coleslaw and alongside sweet potato fries.
