Country Fried Steak and Eggs

Preparation

    Prepare the Steak

    Tenderize the beef round steak by pounding it with a meat mallet until it's about 1/2 inch thick. Season both sides with salt and black pepper.

    Dredge the Steak

    Coat the seasoned steak in all-purpose flour, pressing it down to adhere the flour well. Shake off excess flour.

    Fry the Steak

    In a large skillet, heat 2 tablespoons of butter over medium heat. Add the coated steak and fry for about 4-5 minutes on each side until golden brown and cooked through. Remove the steak and keep warm.

    Cook the Hashbrowns

    In the same skillet, add the remaining butter and toss in the hashbrowns. Cook until golden brown and crispy, about 8-10 minutes, stirring occasionally. Season with salt and pepper to taste.

    Fry the Eggs

    In a separate pan, fry the eggs to your preferred doneness (sunny side up, over easy, etc.).

    Assemble the Plate

    On a plate, place the country fried steak, top it with warm country gravy, add hashbrowns on the side, and serve with toast or pancakes.
