Cook the Potatoes
In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they begin to soften.

Add Veggies and Corned Beef
Add the chopped onion, diced bell pepper, and minced garlic to the skillet. Cook for an additional 5 minutes, until the vegetables are tender. Stir in the corned beef, salt, and black pepper. Cook until heated through, about 5-7 minutes.

Cook the Eggs
While the hash is cooking, prepare the eggs to your liking (fried, scrambled, etc.).

Serve the corned beef hash on a plate topped with the cooked eggs, alongside toast or pancakes.
