Method

Preparing the Cod

  1. 1

    Make the Batter

In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth.

  2. 2

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  3. 3

    Batter the Cod

Dip each cod fillet into the batter, ensuring it’s fully coated.

  4. 4

    Fry the Cod

Carefully place the battered cod into the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through.

  5. 5

    Drain

Remove the cod from the oil and drain on paper towels.

Preparing the French Fries

  1. 6

    Cut the Potatoes

Peel and cut the potatoes into thin strips to make fries.

  2. 7

    Soak the Potatoes

Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

  3. 8

    Heat the Oil

In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  4. 9

    Fry the Potatoes

Carefully add the soaked potato strips to the hot oil and fry until golden brown and crispy, about 5-7 minutes.

  5. 10

    Drain and Season

Remove the fries from the oil and drain on paper towels. Season with salt to taste.
