Prepare the Battering Mixture
In a bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until the mixture is smooth and well combined.

Heat the Oil
In a deep fryer or heavy pot, heat vegetable oil to 350°F (175°C).

Batter the Cod
Dip each cod fillet into the batter, ensuring they are fully coated.

Fry the Cod
Carefully place the battered cod fillets into the hot oil. Fry for about 4-5 minutes or until golden brown and cooked through. Remove from oil and drain on paper towels.

Toast the Buns
While the cod is frying, toast the burger buns until golden brown.

Assemble the Sandwich
On the bottom half of each bun, place a leaf of lettuce and a slice of tomato. Add the fried cod fillet on top, then spoon tartar sauce over the fish. Top with the other half of the bun.

Serve the battered cod fillet sandwiches immediately with extra tartar sauce on the side.
