Prepare oysters and marinade
Rinse shucked oysters briefly in cold water and drain in a fine-mesh sieve. Place oysters in a bowl and add buttermilk, hot sauce, 1 tsp kosher salt, and 1 tsp freshly ground black pepper. Stir gently to coat. Cover and refrigerate for 20–30 minutes — this tenderizes and flavors the oysters and helps the breading adhere.
Breading
Make dry mix
In a shallow dish or rimmed baking sheet, whisk together 1 cup all-purpose flour, 1/2 cup cornmeal, 1/2 cup panko (if using), 1 tsp paprika, 1 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne, 1 tsp kosher salt, and 1/2 tsp black pepper. Mix until evenly distributed.
Make egg wash
In a separate shallow bowl, crack 2 large eggs and whisk with 2 tablespoons milk until smooth.

Heat oil
Pour about 1.5–2 cups vegetable oil into a heavy-bottomed skillet or Dutch oven to a depth of roughly 1 to 1 1/2 inches. Heat over medium-high until the oil reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of flour: it should sizzle immediately and brown in about 30–40 seconds.
Dredge oysters
Working with a few oysters at a time, remove them from the buttermilk, letting excess drip back into the bowl. First dredge each oyster in the flour-cornmeal mixture, shake off excess, then dip into the egg wash, and finally press back into the dry mix so each piece is well-coated. Place breaded oysters on a sheet pan or rack while you finish the rest. For an extra-crisp double coat, dip again in egg wash and a second dry coat.
Fry oysters
When oil is at 350°F (175°C), gently lower small batches of breaded oysters into the oil (do not overcrowd; 6–8 at a time depending on pan size). Fry 1.5–2.5 minutes, turning once, until golden brown and crisp. Internal temperature of oysters will be hot and edges set — do not overcook or they become tough. Use a slotted spoon to transfer to a paper-towel-lined tray to drain. If oil temperature drops below 320°F, raise heat briefly; if it exceeds 365°F, reduce heat to avoid burning the coating. Replenish oil with a little extra neutral oil if needed to maintain depth.
Finish and season
While still hot, sprinkle fried oysters lightly with a pinch of finishing salt to taste. Let rest for 1–2 minutes to set the crust.
Finishing & Serving
Plate and garnish
Arrange fried oysters on a serving platter or individual plates. Garnish with chopped parsley and lemon wedges. Serve immediately with remoulade or tartar sauce on the side for dipping.
