Prepare shrimp

Rinse the shrimp under cold water, pat dry with paper towels. If not already done, peel and devein, leaving tails on for presentation if desired. Place shrimp in a medium bowl.

Make marinade

In a separate bowl, combine chopped chipotle peppers in adobo, lime juice, orange juice, olive oil, soy sauce, honey, grated ginger, minced garlic, lime zest, chopped cilantro, sea salt and black pepper. Whisk until evenly combined and honey dissolves.

Marinate shrimp

Pour about two-thirds of the marinade over the shrimp, reserving the remaining third for basting and finishing sauce. Toss shrimp to coat thoroughly, cover and refrigerate for 20–30 minutes (maximum 1 hour). Do not over-marinate — the citrus can begin to 'cook' the shrimp.

Grilling & Finish

Prepare grill and skewers

If using wooden skewers, soak them in water for at least 30 minutes before grilling. Preheat grill to medium-high (about 400–450°F / 200–230°C). Oil the grill grates lightly to prevent sticking.

Skewer shrimp

Thread 4–6 shrimp per skewer (depending on size), leaving a small gap between each shrimp so heat circulates evenly. Arrange skewers on a tray and let sit at room temperature 5–10 minutes while grill finishes heating.

Grill shrimp

Place skewers over direct heat. Grill 2–3 minutes per side, turning once, until shrimp are opaque and just firm (total 4–6 minutes). During the last 2 minutes, baste lightly with reserved marinade diluted with a teaspoon of melted butter if desired; discard any marinade that touched raw shrimp if not boiled. Avoid overcooking — shrimp should curl into a loose C, not a tight O.

Finish and rest

Transfer skewers to a plate and let rest 2 minutes. Sprinkle with finishing sea salt and chopped cilantro leaves, and squeeze fresh lime wedges over the top.

Serve

Serve the skewers hot with extra reserved sauce warmed (if desired) or using the remaining marinade heated to a simmer for 1–2 minutes to use as a dipping sauce. Accompany with lime wedges and a simple side such as coconut rice, grilled pineapple, or a green salad.
