Prepare cauliflower
Trim the cauliflower, remove leaves and core, and cut into bite-size florets (about 1–1.5 inches). Rinse and drain well; pat dry with a kitchen towel. Dry florets help batter stick and reduce oil splatter.

Blanch (optional for tender interior)
Bring a pot of salted water to a gentle boil. Add florets and blanch 2 minutes, then immediately transfer to an ice bath to stop cooking. Drain and pat dry thoroughly. This step yields a softer interior but can be skipped for a firmer bite.

Make batter
In a bowl combine all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. If using egg, beat it lightly and whisk into the dry mix. Gradually add cold water while stirring until you have a thick, slightly lumpy batter that will coat the back of a spoon. For a lighter, crisper batter, add the ice cubes to a small bowl of the cold water and pour the very cold liquid into the batter just before dipping.

Heat oil
Pour oil into a deep, heavy pot or deep fryer to a depth of about 2–3 inches (or follow your fryer capacity). Heat to 350°F (175°C). If you don't have a thermometer, test by dipping the handle of a wooden spoon—the oil should bubble steadily around it.

Prep coating
Place panko breadcrumbs (or extra flour) in a shallow bowl or plate. Keep a wire rack and a sheet tray lined with paper towels ready for draining.

Coat cauliflower
Working in batches of 6–8 florets (do not overcrowd), dip each dried floret into the batter, letting excess drip off, then roll or press into panko to coat evenly. If you prefer just a battered fry (no breadcrumbs), skip the panko and shake off excess batter instead.

Fry
Carefully lower a few coated florets into the hot oil. Fry, turning occasionally, until golden brown and crisp, about 3–4 minutes per batch depending on floret size. Maintain oil temperature around 325–350°F (160–175°C); if it drops too low, the coating will absorb oil. If it rises too high the exterior will brown before the interior cooks.

Drain and keep warm
Using a slotted spoon or spider, transfer fried cauliflower to the wire rack over the tray to drain. Season lightly with a pinch of salt while still hot. Repeat with remaining florets. Keep cooked batches warm in a 200°F (95°C) oven if needed while finishing the rest.

In a small bowl combine yogurt or mayonnaise, hot sauce, lemon juice, chopped herbs, and 1/4 tsp salt. Stir until smooth and taste; adjust seasoning or heat to preference.
