Prepare Sushi Rice

Rinse and Cook Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear. Combine the rinsed rice and 1.5 cups of water in a pot and bring to a boil. Once boiling, reduce heat to low, cover, and cook for 15-20 minutes or until water is absorbed. Remove from heat and let it sit covered for 10 minutes.
Prepare Tuna Marinade

Marinate Tuna
In a bowl, combine 1 cup of diced fresh tuna, 2 tablespoons of soy sauce, and 1 tablespoon of sesame oil. Mix well and let it marinate in the refrigerator for about 15 minutes.

Prepare Aioli
In a small bowl, mix together 1 cup of mayonnaise and 2 tablespoons of sriracha sauce until well combined. Adjust the sriracha to taste for spiciness.
