Method

Preparing the Fries

    Cutting the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to create fries.

    Soaking the Fries

    Soak the cut fries in cold water for at least 30 minutes. This helps to remove excess starch and make them crispier.

    Drying the Fries

    Drain the water and pat the fries dry with a clean towel to remove as much moisture as possible.

    Frying the Fries

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and place them on paper towels to drain excess oil.

    Seasoning

    Immediately toss the hot fries with sea salt while they are still hot.

Making Garlic Aioli

    Combine Ingredients

    In a small bowl, mix together mayonnaise, minced garlic, lemon juice, salt, and black pepper until smooth and well combined.

    Chill

    Cover the aioli and refrigerate for at least 30 minutes to let the flavors meld.

Frying Parsley

    Heat Oil

    In a small pot, heat a small amount of oil over medium heat.

    Fry Parsley

    Add fresh parsley leaves to the hot oil and fry for 30 seconds until crispy. Remove and drain on paper towels, sprinkling a pinch of salt over them.

Assembling the Dish

    Topping the Fries

    Drizzle the hot fries with truffle oil and toss them to evenly coat. Sprinkle grated Parmesan cheese over the top.

    Serve the truffle fries hot with garlic aioli on the side and garnish with fried parsley.
