Bourbon-Shallot Aioli

Method

Steak Preparation

    Prepare the Rub

    In a small bowl, mix together espresso powder, brown sugar, paprika, salt, and black pepper.

    Season the Steak

    Rub the hanger steak with olive oil and then coat it evenly with the espresso rub. Let it marinate for at least 30 minutes at room temperature.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Let it rest for 5 minutes before slicing.

Fries Preparation

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into fries, about 1/4 inch thick.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, then season with salt.

Bourbon-Shallot Aioli Preparation

    Sauté Shallots

    Finely chop the shallots and sauté them in a small pan over medium heat with a bit of olive oil until translucent, about 3-4 minutes. Set aside to cool.

    Mix Aioli

    In a bowl, combine mayonnaise, sautéed shallots, bourbon, minced garlic, and lemon juice. Mix well and season with salt and black pepper to taste.
