Preparation

  1. 1

    Cook the Bacon

In a skillet over medium heat, cook the bacon strips until crispy. Remove from skillet and let drain on paper towels. Once cooled, chop into bite-sized pieces.

  2. 2

    Grill the Chicken

Season the chicken breasts with salt and pepper. Preheat the grill to medium-high heat. Grill the chicken for 6-7 minutes on each side, or until fully cooked. Remove from the grill and let rest for a few minutes before slicing.

  3. 3

    Prepare the Vegetables

While the chicken is grilling, wash the mixed greens and place them in a large salad bowl. Halve the cherry tomatoes, dice the avocado, and thinly slice the red onion. Add these vegetables along with the corn to the bowl.

Make the Dressing

  1. 4

    Combine Dressing Ingredients

In a small bowl, whisk together the olive oil, lime juice, minced jalapeño, honey, salt, and black pepper until well combined.

Assemble the Salad

  1. 5

    Combine Salad Ingredients

Once the chicken has rested, slice it into strips. Add the sliced chicken and chopped bacon to the salad bowl with mixed greens and other vegetables.

  2. 6

    Dress the Salad

Drizzle the jalapeño-lime dressing over the salad. Toss gently to combine all ingredients and coat with the dressing.

Serve
