Caramelized Onion Cream Cheese

Prepare the Onions
Slice the yellow onions thinly. In a large skillet, melt the butter over medium heat. Add the sliced onions and salt. Cook for about 15-20 minutes, stirring occasionally, until the onions are caramelized and golden brown.

Mix the Cream Cheese
In a bowl, combine the softened cream cheese, caramelized onions, pepper, and thyme. Mix until well blended. Set aside.
Au Jus

Combine Ingredients
In a small saucepan, combine the beef broth, soy sauce, Worcestershire sauce, garlic powder, and pepper. Bring to a simmer over medium heat.

Simmer
Allow the au jus to simmer for about 10 minutes, stirring occasionally. Remove from heat and set aside.
Sandwich Assembly

Prepare the Baguette
Slice the rustic baguette in half lengthwise. Lightly toast both halves if desired.

Assemble the Sandwich
Spread a generous amount of the caramelized onion cream cheese on one half of the baguette. Layer slices of roasted prime rib on top of the cream cheese, followed by a handful of fresh arugula. Close the sandwich with the other half of the baguette.

Fry the Chips
In a large skillet, heat the olive oil over medium-high heat. Add the potato slices in batches and fry until golden brown and crispy, about 3-4 minutes. Remove from oil and drain on paper towels. Sprinkle with salt immediately.
