Prepare Lobster Filling

Cook the Lobster
If using whole lobsters, boil them in salted water for 8-10 minutes until fully cooked. Remove the meat and chop it into bite-sized pieces.

Mix Ingredients
In a mixing bowl, combine the chopped lobster meat, mayonnaise, lemon juice, salt, black pepper, and chives. Stir until well mixed and set aside.
Assemble the Rolls

Prepare the Rolls
Spread softened butter on the outside of each split top potato roll.

Toast the Rolls
In a skillet over medium heat, toast the rolls until golden brown, about 2-3 minutes per side.

Fill the Rolls
Once toasted, fill each roll with a generous portion of the lobster filling. Top with arugula and diced peppadew peppers.
