Method

Steak Preparation

    Prepare the Steak

    Remove the bone in strip steak from the refrigerator and let it come to room temperature for about 30 minutes before cooking. Preheat your grill or skillet to high heat.

    Season the Steak

    Generously season both sides of the steak with salt and black pepper.

    Cook the Steak

    Place the steak on the hot grill or skillet. Cook for about 4-5 minutes on each side for medium-rare, adjusting the time for your preferred doneness.

Bone Marrow Butter

    Prepare Bone Marrow

    Preheat the oven to 400°F (200°C). Place the bone marrow in a roasting pan and roast for 15-20 minutes until the marrow is soft.

    Make the Butter

    In a mixing bowl, combine the roasted bone marrow with softened butter, parsley, garlic, lemon zest, salt, and black pepper. Mix until well combined and set aside.

Mashed Potatoes

    Cook the Potatoes

    Peel and cut the russet potatoes into even chunks. Boil in salted water for about 15-20 minutes until fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter and heavy cream, then mash until smooth. Season with salt and black pepper to taste.

Asparagus Preparation

    Prepare the Asparagus

    Trim the tough ends off the asparagus. Toss with olive oil, salt, and black pepper.

    Cook the Asparagus

    In a skillet over medium heat, sauté the asparagus for about 5-7 minutes until tender but still crisp. You can also grill them for a smoky flavor.

Assembly

    Plate the Dish

    On a large plate, place a generous serving of mashed potatoes, topped with the cooked steak. Add a dollop of bone marrow butter on top of the steak and arrange the sautéed asparagus on the side.
